Cette tarte citron meringu\u00e9e est un mix de plusieurs recettes, d&rsquo;o\u00f9 je ne&rsquo;ai conserv\u00e9 que ce qui m\u2019int\u00e9ressait.<\/p>\n<p>Le fond de tarte est <a title=\"Tarte au Citron c'est ma Fourn\u00e9e\" href=\"http:\/\/www.cestmafournee.com\/2011\/10\/tarte-au-citron-pate-sucree-christophe.html\" target=\"_blank\">la p\u00e2te sucr\u00e9e de Michalak<\/a>, que j&rsquo;ai pris sur <a title=\"C'est ma Fourn\u00e9e\" href=\"http:\/\/www.cestmafournee.com\/\" target=\"_blank\">c&rsquo;est ma fourn\u00e9e<\/a>, comme \u00e0\u00a0mon habitude. Le Lemon Curd est le m\u00eame que celui que j&rsquo;utilise dans mes <a title=\"Macarons Gingembre \u2013 Citron Vert\" href=\"http:\/\/cuisine.thebault.eu\/?p=424\" target=\"_blank\">macarons Citron\/Gingembre<\/a>, et la meringue Italienne, quand \u00e0\u00a0elle, n&rsquo;est pas cette fois r\u00e9alis\u00e9e au Thermomix, mais tout simplement au batteur.<\/p>\n<p><!--more--><\/p>\n<p>Voici donc les ingr\u00e9dients :<\/p>\n\n<p>Petit rappel avant de d\u00e9marrer, pensez \u00e0\u00a0sortir vos blancs d&rsquo;oeufs en tout d\u00e9but de recette, pour qu&rsquo;il soient bien \u00e0\u00a0temp\u00e9rature ambiante.<\/p>\n<p>Commencez par r\u00e9aliser le fond de tarte. Pesez ensembles les diff\u00e9rentes poudre (Farine, Ma\u00efzena, Sucre Glace, Poudre d&rsquo;Amande et Sel), et m\u00e9langez les \u00e0 la cuill\u00e8re magique.<\/p>\n<p><a \u00e9talez la p\u00e2te entre 2 feuilles de papier sulfuris\u00e9, (entre <strong>3 et 5 mm<\/strong> d&rsquo;\u00e9paisseur)et r\u00e9servez au frais.<\/p>\n<p><a \u00e0\u00a0<strong>170\u00b0 Chaleur Tournante<\/strong>.<\/p>\n<p>Portez sur feu doux ce m\u00e9lange \u00e0\u00a0\u00e9bullition, en remuant tout le temps au fouet ou \u00e0 la cuill\u00e8re magique et conservez l&rsquo;\u00e9bullition (toujours en remuant) pendant quelques minutes pour obtenir la consistance voulue. (Le m\u00e9lange doit \u00e9paissir et avoir un aspect semblable a celui d&rsquo;une cr\u00e8me p\u00e2tissi\u00e8re, en l\u00e9g\u00e8rement plus liquide.)<\/p>\n<p>Arriv\u00e9 \u00e0 la bonne consistance, r\u00e9servez l&rsquo;appareil dans un cul de poule, et ajouter tout de suite le beurre en morceaux.<\/p>\n<p><a frais.<\/p>\n<p>Sortez a pr\u00e9sent la p\u00e2te du frigo, munissez vous d&rsquo;un cercle de <strong>22 cm<\/strong> et coupez la p\u00e2te \u00e0 l&rsquo;aide du cercle (comme un gros emporte
