J&rsquo;ai pris mon courage a 2 mains, fouill\u00e9 un peu sur le web, et me suis une fois de plus tourn\u00e9 vers mon blog de r\u00e9f\u00e9rence, <a title=\"C'est Ma Fourn\u00e9e\" href=\"http:\/\/www.cestmafournee.com\/\" target=\"_blank\">c&rsquo;est ma fourn\u00e9e<\/a>, pour avoir les bases de mes deux recettes.<\/p>\n<p>Celle que je vais d\u00e9crire ici est partie de la recette de la<a title=\"C'est ma fourn\u00e9e - B\u00fbche au Chocolat\" href=\"http:\/\/www.cestmafournee.com\/2011\/12\/la-buche-au-chocolat-biscuit-joconde.html\" target=\"_blank\"> b\u00fbche au chocolat que l&rsquo;on retrouve sur ce magnifique blog<\/a>. En d\u00e9cortiquant la recette, dans les ingr\u00e9dients de la cr\u00e8me au beurre chocolat, Val\u00e9rie, la r\u00e9dactrice, indique que l&rsquo;on peut remplacer la chocolat de la recette par tout autre composante, et la, c&rsquo;est le d\u00e9clic, je vais r\u00e9aliser une b\u00fbche pistache \/ framboise, l&rsquo;un de mes m\u00e9lange pr\u00e9f\u00e9r\u00e9!<\/p>\n<p><!--more--><\/p>\n<p>J&rsquo;ai donc gard\u00e9 de cette recette le biscuit joconde, et ai r\u00e9alis\u00e9 la cr\u00e8me au beurre all\u00e9g\u00e9e de Felder que l&rsquo;on retrouve dans son fameux livre &lsquo;Patisserie&rsquo; (le superbe livre rose que j&rsquo;ai eu en cadeau \u00e0 mon anniversaire, merci belle maman!)<\/p>\n<p>Voici donc les ingr\u00e9dients :<\/p>\n\n<p>La R\u00e9alisation :<\/p>\n<p>Commencez par r\u00e9aliser les minis coques pistaches en suivant <a title=\"Macarons \u00e0 la meringue Italienne au Thermomix\" href=\"http:\/\/cuisine.thebault.eu\/?p=77\" target=\"_blank\">la recette de base<\/a> avec les quantit\u00e9s indiqu\u00e9es ici. Les gouttes d&rsquo;amande am\u00e8re sont \u00e0 ajouter au sirop.<\/p>\n<p>Lors du pochage des macarons, veillez a faire de petits macarons, vous pouvez utiliser, comme je l&rsquo;ai fais, le \u00e9clats de pistache sur les coques avant de mettre au four \u00e0 <strong>150\u00b0 chaleur tournant pendant 10 minutes<\/strong> (le temps de cuisson est moins long tout simplement parce que les biscuits sont plus petits.)<\/p>\n<p>Une fois les macarons cuits et refroidis, r\u00e9servez les dans une boite herm\u00e9tique.<\/p>\n<p>Le biscuit maintenant, j&rsquo;ai adapt\u00e9 la recette donn\u00e9e sur c&rsquo;est ma fourn\u00e9e pour la r\u00e9aliser au Thermomix, donc :<\/p>\n<p>Commencez par pr\u00e9chauffer votre four \u00e0 <strong>200\u00b0 chaleur tournante<\/strong>.<\/p>\n<p>Mettre le beurre au four micro onde puissance <strong>600 W pour 1 min<\/strong>. finissez de faire fondre le beurre en le m\u00e9langeant \u00e0 la spatule. d&rsquo;amande et le sucre glace, ajoutez la moiti\u00e9 des \u0153ufs battus et programmez pour <strong>8 min vit 3<\/strong>.<\/p>\n<p><a pass\u00e9es<\/strong> (le TM indique donc 5 minutes restantes) ajoutez le reste des \u0153ufs battus.<\/p>\n<p>pendant ce temps, commencez a monter les blancs en neige au batteur en les serrant avec les 12 g de sucre.<\/p>\n<p>Lorsque <strong>6 minutes sont pass\u00e9es<\/strong>, ajouter le beurre fondu refroidit.<\/p>\n<p>\u00e0 la sonnerie du TM, r\u00e9servez l&rsquo;appareil.<\/p>\n<p><a avec un torchon propre et sec.<\/p>\n<p>Passons ensuite \u00e0 la confection de la cr\u00e8me au beurre l\u00e9g\u00e8re de Felder<\/p>\n<p>Commencer par peser le sucre et l&rsquo;eau de la partie cr\u00e8me au beurre (pour rappel, <strong>192 g de sucre et 80 g d&rsquo;eau<\/strong>), puis mettez vos<strong> 4 jaunes\u00a0<\/strong><b>d\u2019\u0153ufs<\/b>\u00a0dans le bol du TM muni du m\u00eame temps, serrez les blancs avec le sucre extra fin d\u00e8s que le m\u00e9lange commence \u00e0 mousser. Lorsque le sirop est \u00e0 <strong>118\u00b0<\/strong>, versez le doucement sur le bord de votre r\u00e9cipient, et continuer de battre quelques minutes pour laisser la meringue cr\u00e8me au beurre, le Thermomix est toujours en rotation, le m\u00e9lange jaunes\/sirop mettant tr\u00e8s (<span style=\"text-decoration: underline;\">tr\u00e8s tr\u00e8s<\/span>) longtemps \u00e0 descendre sous la barre des 35\u00b0 pour ces quantit\u00e9, j&rsquo;ai \u00e9t\u00e9 oblig\u00e9 d&rsquo;attendre une quarantaine de minutes, j&rsquo;ai m\u00eame \u00e9t\u00e9 jusqu\u2019\u00e0 couper le TM et ouvrir le bol (pas plus de 5 minutes sinon \u00e7a risque de figer un peu) pour permettre au m\u00e9lange de bien refroidir.<\/p>\n<p>Si vous omettez de laissez le m\u00e9lange refroidir et que vous incorporez le beurre trop t\u00f4t, votre cr\u00e8me au beurre sera liquide et plus difficile \u00e0 utiliser par la suite.<\/p>\n<p>Donc, une fois que le m\u00e9lange jaunes\/sirop est descendu sous les fameux <strong>35\u00b0<\/strong>, ajoutez le beurre cr\u00e9m\u00e9 par petites quantit\u00e9 par l&rsquo;ouverture du bol sans jamais arr\u00eater la rotation du TM.<\/p>\n<p>Une fois tout le beurre dans le bol, donnez<strong> quelques secondes (entre 5 et 10 s) de vit 5<\/strong>, et arr\u00eatez compl\u00e8tement le Thermomix.<\/p>\n<p>Videz le bol dans un cul de poule et versez dessus le meringue italienne froide (vu le temps de refroidissement de la cr\u00e8me au beurre, pas de soucis de ce cot\u00e9 la.).M\u00e9langez doucement \u00e0 la maryse.<\/p>\n<p>Transvasez votre cr\u00e8me au beurre l\u00e9g\u00e8re dans une poche \u00e0 douille, sortez la confiture, les framboises et les \u00e9clats de pistaches.<\/p>\n<p>Reprenez votre biscuit et \u00e9talez dessus au pinceau une bonne couche de confiture de framboise.<\/p>\n<p><a href=\"http:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/01\/P1050150.jpg\"><img
