De l&rsquo;original, donc, j&rsquo;ai gard\u00e9 la forme ronde, et la construction, a partir de choux coll\u00e9s les uns aux autres, mais, invention oblige, j&rsquo;ai pour ma part rempli le cercle d&rsquo;autres choux, ce qui s&rsquo;est av\u00e9r\u00e9 un peu plus dur a cuire qu&rsquo;un Paris Brest Classique. Le nom ensuite, j&rsquo;ai choisi Alen\u00e7on parce que ce g\u00e2teau ci est \u00e0 base de pomme, donc, rappel de la Normandie, et mes beaux parents \u00e9tant natif de la bas, c&rsquo;est la premi\u00e8re ville normande qui me soit venue a l&rsquo;esprit.<\/p>\n<p><!--more--><\/p>\n<p>Venons en au fait, voici les ingr\u00e9dients donc vous aurez besoin :<\/p>\n\n<p>Pour commencer, r\u00e9alisez la compote, pour cela, rien de plus simple, \u00e9pluchez\/\u00e9videz les pommes, coupez les grossi\u00e8rement et mettez les morceaux dans le bol du TM pour <strong>10 min T\u00b0 90 vit 2<\/strong>.<\/p>\n<p>A la sonnerie donnez un coup de <strong>vit 8 <\/strong>pendant<strong> 30 sec<\/strong> pour bien lisser la compote. R\u00e9servez au frais.<\/p>\n<p>Les choux maintenant. Pour cela, nous allons commencer par la p\u00e2te a crumble. p\u00e2te \u00e0 choux.<\/p>\n<p>Pour la p\u00e2te \u00e0 choux \u00e0 proprement parler, j&rsquo;ai suivi le d\u00e9roulement de la recette classique Thermomix, mais en prenant les ingr\u00e9dients de la recette de Conticini.<\/p>\n<p>Commencez par pr\u00e9chauffer votre four \u00e0 <strong>200\u00b0 chaleur <span style=\"text-decoration: underline;\">statique<\/span><\/strong>.<\/p>\n<p>Pesez et faire tourner \u00e0<strong> vit 5<\/strong>. puis casser les \u0153ufs un \u00e0 un et laisser tourner encore <strong>30 sec<\/strong> apr\u00e8s le dernier \u0153uf.<\/p>\n<p>Une fois ce m\u00e9lange fini, transvasez le dans une poche \u00e0 douille lisse entre 8 et 10, et formez vos choux.<\/p>\n<p>Comme toujours, je me suis amus\u00e9 \u00e0 dessiner un gabarit pour ce g\u00e2teau, oblig\u00e9 d&rsquo;utiliser une verrine comme emporte pi\u00e8ce parce que je n&rsquo;avais pas d&#8217;emporte pi\u00e8ce rond de la bonne taille. Il s&rsquo;av\u00e8re que c&rsquo;est Mr Conticini qui est l&rsquo;inventeur des verrines, alors merci \u00e0 lui pour nous permettre d&rsquo;avoir de petits verres qui servent a tout, finalement.<\/p>\n<p>Baissez votre four a <strong>190\u00b0<\/strong> et enfournez. La norme de cuisson pour des choux est de 20 \u00e0 25 min \u00e0 190\u00b0, puis 10 \u00e0 15 min four ouvert \u00e0 160\u00b0, j&rsquo;ai suivi ces recommandations pour ma premi\u00e8re fourn\u00e9e, grosse erreur, tous les choux du milieu se sont affaiss\u00e9s d\u00e8s l&rsquo;ouverture du four. Et attention aussi a ne pas vous br\u00fbler, c&rsquo;est chaud!<\/p>\n<p><span style=\"text-decoration: underline;\">Le Montage<\/span> :<\/p>\n<p>Lorsque les diff\u00e9rents \u00e9l\u00e9ments \u00a0sont pr\u00eats, et froid, passez au montage.<\/p>\n<p>Commencez par coupez les choux, utilisez un grand couteau type couteau a pain et allez y doucement pour ne pas casser le g\u00e2teau, puis s\u00e9parez le chapeau du fond.
