Dans mes recherches, j\u2019\u00e9tais tomb\u00e9 sur la recette de la barre Chocoday de Felder que l&rsquo;on retrouve dans le premier num\u00e9ro de<a title=\"Fou de P\u00e2tisserie\" href=\"http:\/\/foudepatisserie.fr\/\" target=\"_blank\"> Fou de P\u00e2tisserie<\/a>, un excellent magazine que je conseil \u00e0\u00a0tous les amateurs de p\u00e2tisserie.<\/p>\n<p>J&rsquo;ai donc tent\u00e9 cette recette, et n&rsquo;\u00e9tais pas compl\u00e8tement satisfait du r\u00e9sultat, par contre, sa mousse\u00a0\u00e9tait parfaite! J&rsquo;ai donc continu\u00e9 mes recherches et suis tomb\u00e9 sur la recette du <a title=\"Trianon C'est ma Fourn\u00e9e\" href=\"http:\/\/www.cestmafournee.com\/2012\/12\/le-trianon-ou-royal-au-chocolat.html\" target=\"_blank\">Trianon<\/a> de <a title=\"C'est ma Fourn\u00e9e\" href=\"http:\/\/www.cestmafournee.com\/\" target=\"_blank\">C&rsquo;est ma Fourn\u00e9e<\/a>, j&rsquo;ai donc d\u00e9cid\u00e9 de faire un mix de ces recettes, et en voici le r\u00e9sultat :<\/p>\n<p><a href=\"http:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1050982.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1722 aligncenter\" src=\"http:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1050982-300x225.jpg\" alt=\"P1050982\" width=\"300\" height=\"225\" srcset=\"https:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1050982-300x225.jpg 300w, https:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1050982-400x300.jpg 400w, https:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1050982.jpg 800w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Il s&rsquo;agit ici de ma premi\u00e8re tentative, et je m\u2019\u00e9tais un peu rat\u00e9 sur la coque, en suivant cette recette pas \u00e0 pas, les fissures que l&rsquo;on aper\u00e7oit sur la photo ne doivent pas appara\u00eetre<\/p>\n<p><!--more--><\/p>\n<p>Bref, commen\u00e7ons, tout d&rsquo;abord, les ingr\u00e9dients :<\/p>\n\n<p>Petit rappel avant de d\u00e9marrer, cette recette comporte une chantilly, veillez donc \u00e0\u00a0mettre au frais votre cr\u00e8me liquide la veille de sa pr\u00e9paration, et \u00e0\u00a0mettre les ustensiles servant \u00e0\u00a0monter la chantilly au cong\u00e9lateur en d\u00e9but de recette.<\/p>\n<p>Commencez par les noisettes caram\u00e9lis\u00e9es.<\/p>\n<p>Torr\u00e9fiez les noisettes au four \u00e0 <strong>150\u00b0 Chaleur Tournante<\/strong> pour <strong>15 \u00e0 20 min<\/strong>, en remuant les fruits de temps \u00e0 autre.<\/p>\n<p>Vous pouvez tout \u00e0 fait torr\u00e9fier les deux doses de noisettes ensemble, et les s\u00e9parer apr\u00e8s cette op\u00e9ration.<\/p>\n<p>Donc, une fois la torr\u00e9faction termin\u00e9e, s\u00e9parez les noisettes servant \u00e0 la d\u00e9coration, et concassez le reste grossi\u00e8rement, \u00e0 l&rsquo;aide d&rsquo;un fond de casserole, ou avec un rouleau \u00e0\u00a0p\u00e2tisserie, \u00e9liminez les poudres ainsi cr\u00e9es, pour ne garder que les gros morceaux.<\/p>\n<p><a href=\"http:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060068.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1723 aligncenter\" src=\"http:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060068-300x225.jpg\" alt=\"P1060068\" width=\"300\" height=\"225\" srcset=\"https:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060068-300x225.jpg 300w, https:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060068-400x300.jpg 400w, https:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060068.jpg 800w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Pr\u00e9parez le sirop (sucre + eau)<\/p>\n<p><a href=\"http:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060069.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1724 aligncenter\" src=\"http:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060069-300x225.jpg\" alt=\"P1060069\" width=\"300\" height=\"225\" srcset=\"https:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060069-300x225.jpg 300w, https:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060069-400x300.jpg 400w, https:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060069.jpg 800w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Et portez \u00e0 <strong>120\u00b0<\/strong>. A ce moment, versez les fruits dans la casserole, ajoutez le beurre et commencez \u00e0 brasser le tout \u00e0 la cuill\u00e8re en bois.<\/p>\n<p>Les fruits vont sabler, c&rsquo;est \u00e0 dire qu&rsquo;il vont se couvrir de sucre, et donc blanchir, continuez de brasser pour que le sucre remonte en temp\u00e9rature, et caram\u00e9lise.<\/p>\n<p>Lorsque les noisettes sont enti\u00e8rement caram\u00e9lis\u00e9es, d\u00e9barrassez les sur une grande planche de d\u00e9coupe et s\u00e9parez les pour les laisser refroidir, puis r\u00e9servez.<\/p>\n<p><a href=\"http:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060070.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1725 aligncenter\" src=\"http:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060070-300x225.jpg\" alt=\"P1060070\" width=\"300\" height=\"225\" srcset=\"https:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060070-300x225.jpg 300w, https:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060070-400x300.jpg 400w, https:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1060070.jpg 800w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Recommencez l&rsquo;op\u00e9ration avec les noisettes enti\u00e8res, qui elles serviront \u00e0 la d\u00e9coration.<\/p>\n<p>Passons ensuite a la confection du feuillet\u00e9 pralin\u00e9. Je m\u2019\u00e9tais toujours demand\u00e9 comment r\u00e9aliser la petite couche craquante que l&rsquo;on retrouve dans l&rsquo;Op\u00e9ra, par exemple, sans jamais parvenir a trouver l\u2019ingr\u00e9dient myst\u00e8re. Il s&rsquo;av\u00e8re que ce que les boulanger, p\u00e2tissier, professionnel en tout genre appellent de la feuilletine, le fameux ingr\u00e9dient qui donne ce croustillant, n&rsquo;est en fait que de la <em>gavotte<\/em> \u00e9cras\u00e9e. La gavotte, c&rsquo;est un petit g\u00e2teau compos\u00e9 d&rsquo;une cr\u00eape tr\u00e8s fine enroul\u00e9e sur elle m\u00eame :<\/p>\n<p><a
