maison&#8230;<\/p>\n<p>Apr\u00e8s avoir tent\u00e9 les craquelins sur le <a title=\"Le Paris Alen\u00e7on\" href=\"http:\/\/cuisine.thebault.eu\/?p=1369\" target=\"_blank\">Paris Alen\u00e7on<\/a>, et sur le Paris Brest de Conticini, j&rsquo;ai voulu essayer\u00a0une d\u00e9clinaison sal\u00e9e, pour un ap\u00e9ritif avec des amis.<\/p>\n<p>Je suis donc parti sur l\u00a0\u00bbid\u00e9e d&rsquo;un choux garni d&rsquo;une mousse saumon recouvert d&rsquo;un craquelin \u00e0 base de fromage.<\/p>\n<p>Voici les ingr\u00e9dients :<\/p>\n<p><!--more--><\/p>\n\n<p>Avant toute chose, cette recette comportant une chantilly, <span style=\"text-decoration: underline;\">veillez \u00e0\u00a0placez les instruments servant \u00e0 la r\u00e9aliser au cong\u00e9lateur<\/span> en d\u00e9but de confection, et \u00e0\u00a0placez la cr\u00e8me fra\u00eeche au frais la veille.<\/p>\n<p>Commencez par le craquelin \u00e0\u00a0proprement parler.<\/p>\n<p>Versez tous les ingr\u00e9dients dans le 5<\/strong>.<\/p>\n<p>Vous obtenez une p\u00e2te un peu poudreuse \u00e0 la mani\u00e8re d&rsquo;une p\u00e2te sabl\u00e9e.<\/p>\n<p><a 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Puis r\u00e9servez au frais le temps de r\u00e9aliser la p\u00e2te \u00e0\u00a0choux.<\/p>\n<p>Pr\u00e9chauffez tout d&rsquo;abord votre four \u00e0\u00a0<strong>210\u00b0 Chaleur Statique<\/strong>.<\/p>\n<p>Pesez donc l&rsquo;eau, le beurre et le sel fin, et placez les dans le bol.<\/p>\n<p>Programmez pour <strong>5 min 100\u00b0 vit 1<\/strong>.<\/p>\n<p>A la sonnerie, ajoutez la farine, et r\u00e9glez pour <strong>1 min 30 sec vit 3<\/strong>.<\/p>\n<p>A la fin de ce cycle, ouvrez le couvercle du Thermomix, et laissez refroidir environ <strong>5 min<\/strong>.<\/p>\n<p>Apres refroidissement, refermez le TM, mettez en rotation<strong> vit 5<\/strong>, et cassez les oeufs un par un, puis laissez tourner encore <strong>30 sec<\/strong> apr\u00e8s le dernier oeuf.<\/p>\n<p>Garnissez la p\u00e2te ainsi obtenue dans une poche munie d&rsquo;un douille lisse, et dressez vos choux.<\/p>\n<p><a m\u00eame diam\u00e8tre que vos choux (j&rsquo;ai utilis\u00e9 une verrine pour ma part), d\u00e9coupez le nombre de craquelin voulu dans la p\u00e2te \u00e0\u00a0craquelin pr\u00e9par\u00e9e pr\u00e9c\u00e9demment.<\/p>\n<p><a href=\"http:\/\/cuisine.thebault.eu\/wp-content\/uploads\/2014\/05\/P1050689.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1829 <strong>190\u00b0<\/strong>.<\/p>\n<p>Enfournez pour <strong>30 minutes<\/strong>. Attention, durant cette p\u00e9riode de cuisson, il est absolument i<span style=\"text-decoration: underline;\">nterdit d&rsquo;ouvrir le four<\/span>, sous peine de voir vos choux lamentablement retomber.<\/p>\n<p>Une fois la demi heure pass\u00e9e, baissez votre four\u00a0\u00e0 <strong>160\u00b0<\/strong> et <span style=\"text-decoration: underline;\">entre &#8211; ouvrez la porte<\/span>. Laissez les choux secher pendant <strong>15 \u00e0 20 minutes<\/strong>, puis sortez les et laissez les refroidir sur grille.<\/p>\n<p><a saumon.<\/p>\n<p>placez les tranches de saumon, le jus du citron, et la premi\u00e8re quantit\u00e9 de cr\u00e8me (la plus petite) dans le bol.<\/p>\n<p>R\u00e9glez pour <strong>10 sec vit 4<\/strong>, rabattez les \u00e9l\u00e9ments coll\u00e9s aux parois, puis faites tourner une nouvelle fois <strong>30 sec vit 3<\/strong> et enfin, r\u00e9servez.<\/p>\n<p><a
